Coconut Dipping Sauce
This creamy, non-dairy Coconut Sauce pairs perfectly with my recipe for oven baked Coconut Shrimp. In a matter of minutes you can have a perfect dip for whatever you want to dunk. Try this Coconut Dipping Sauce, I think you will be delighted.
Sometimes I like to go coconut over board and like to add a tablespoon of shredded coconut.
Let’s talk Coconut Milk Powder…
Lectin-free Friends always want to know which products I am using. I buy an organic powder coconut milk from Amazon, the brand is Micro Ingredients. I have tried several different types of powdered coconut milk but I keep coming back to this one because the only ingredient is coconut and it dissolves the best compared to the other brands I’ve used. You don’t have to buy this brand but I always encourage you to Read the label on everything you buy. Most of the other powered coconut milks have maltodextrin which I try to avoid. This comes in a 2 lbs bag, which seems like a lot but I always seem to be ordering more. I use this as a thickening agent for soups & sauces, to add a creamy flavor without adding dairy. One of my secret tips is to use this powdered coconut milk for creamer when I’m on the go. I keep a snack sized zipper bag with the scoop in my purse so, I always have coffee creamer when I’m traveling.
