Its time for a yummy chocolate waffle. If you like Gundry MD’s Proplant Complete Shake in chocolate flavor then you will love these waffles. This recipe is lectin-free, gluten-free, & dairy free which may be good for those of you who have sensitivities.

My chocolate protein waffle tastes just like the protein mix. If you are familiar with the flavor of the protein shake, now imagine it in the form of a waffle form. These waffles are crisp on the outside and very sweet with a heavy stevia flavor from the protein powder.

Lets talk Waffle Makers…

There are so many different varieties of waffle makers on the market, it’s hard to choose which one is right for you. I’ve broken it down into two categories depending on your waffle preference. Check below to see if your style is American or Belgian. *See my note below on which waffle maker is best for this recipe.

American Waffle Maker- also known as the traditional waffle maker makes a thinner and denser waffle with smaller pockets. Waffles made in an American waffle maker tend to be crispier and have a richer flavor. These are the type of waffles that you would have if you were dining at The Waffle house or using a toaster or microwave at home to make a frozen Eggo brand waffles. Usually, these are the waffles swimming in maple syrup.

Belgian Waffle Maker- make thicker and fluffier waffles with deeper pockets. These waffles have a light crispness on the outside. You’ll usually find these waffles at a fancier place. I like to call these “Hotel Waffles” because the best Belgian waffles I’ve ever had have always been at a hotel. Belgian waffles are usually topped with whipped cream, fresh berries, and syrup or honey.

Which one is my favorite?
I love waffles period so, this is a hard question. Growing up, my mom and I would take a girl’s trip once a year. No matter where we went, we always stayed at a place where we could order room service. Some of my fondest childhood memories with my mom were from those trips. I remember the excitement I felt when there was a knock on the door and a waiter dressed in his hotel uniform entered the room pushing a fancy cart covered with silver domes and a kraft of coffee on a perfectly placed white linen tablecloth. My eyes were always delighted when I lifted a silver dome and a huge Belgian waffle covered with lavish whipped cream, fresh berries, and my own mini pitcher filled with syrup was waiting for me. The sweet smell of Belgian waffles would linger in the room while we got ready for our day. I do prefer my waffles on the crispier side so when I’m at home I use an American waffle maker. How’s that for a twist?

Since going “lectin-free” I no longer eat at The Waffle House, eat Eggo brand frozen waffles, eat syrups loaded with sugar, or eat “hotel waffles” but that doesn’t mean I have to miss out on eating something I love. If you love waffles too be sure to check out these recipes for Waffles With Almond Flour or Waffles with Cassava Flour.

*Chocolate Protein waffles recipe is best suited for a tiny American waffle maker by DASH which makes a 3 or 4 inch waffle. This recipe yields 2 tiny waffles perfectly & yields 1 regular sized American waffle.

Tips from the Lectin Free Wife…

  • Be sure to lightly grease the waffle iron. It keeps the edges crisp and the batter from sticking.

  • Have all the ingredients out before mixing and waffle iron heated. The protein powder can thicken up quickly.

  • Feel free to experiment with the waffle tastes. For a richer chocolate waffles, add cocoa powder; for cinnamon spice waffles, add cinnamon.
