Waffles made with cassava flour are delightful, crunchy on the outside, and fluffy on the inside. Cassava flour waffles will be your new favorite breakfast. These waffles are close to regular waffles as you will get but it will depend which type of waffle maker you use to determine how crispy they will be. These waffles are slightly sweet and are simple to make at home. Only a few ingredients are required to make cassava flour waffles. They're low in calories. Cassava flour is the primary ingredient in these waffles. Cassava flour is vegan, lectin-free, and gluten-free. This recipe can be made, dairy free by using a compliant oil instead of butter and water in place of A2 milk, which may be good for those of you who are dairy-free.

These delicious cassava flour waffles are made in less than 40 minutes. If you want to make a large number of cassava flour waffles, you can freeze them and reheat in the microwave. You can even prepare ahead of time, then reheat for later in the week when you have time to enjoy them for breakfast.

Lets talk Waffle Makers…

There are so many different varieties of waffle makers on the market, it’s hard to choose which one is right for you. I’ve broken it down into two categories depending on your waffle preference. Check below to see if your style is American or Belgian.

American Waffle Maker- also known as the traditional waffle maker makes a thinner and denser waffle with smaller pockets. Waffles made in an American waffle maker tend to be crispier and have a richer flavor. These are the type of waffles that you would have if you were dining at The Waffle house or using a toaster or microwave at home to make a frozen Eggo brand waffles. Usually, these are the waffles swimming in maple syrup.

Belgian Waffle Maker- make thicker and fluffier waffles with deeper pockets. These waffles have a light crispness on the outside. You’ll usually find these waffles at a fancier place. I like to call these “Hotel Waffles” because the best Belgian waffles I’ve ever had have always been at a hotel. Belgian waffles are usually topped with whipped cream, fresh berries, and syrup or honey.

Which one is my favorite?
I love waffles period so, this is a hard question. Growing up, my mom and I would take a girl’s trip once a year. No matter where we went, we always stayed at a place where we could order room service. Some of my fondest childhood memories with my mom were from those trips. I remember the excitement I felt when there was a knock on the door and a waiter dressed in his hotel uniform entered the room pushing a fancy cart covered with silver domes and a kraft of coffee on a perfectly placed white linen tablecloth. My eyes were always delighted when I lifted a silver dome and a huge Belgian waffle covered with lavish whipped cream, fresh berries, and my own mini pitcher filled with syrup was waiting for me. The sweet smell of Belgian waffles would linger in the room while we got ready for our day. I do prefer my waffles on the crispier side so when I’m at home I use an American waffle maker. How’s that for a twist?

Since going “lectin-free” I no longer eat at The Waffle House, eat Eggo brand frozen waffles, eat syrups loaded with sugar, or eat “hotel waffles” but that doesn’t mean I have to miss out on eating something I love. If you love waffles too be sure to check out this recipe for my Waffles With Almond Flour and Chocolate Protein Waffles.

Tips from the Lectin Free Wife…

  • Be sure to lightly grease the waffle iron. It keeps the edges crisp and the batter from sticking.

  • Feel free to experiment with the waffle tastes. For chocolate waffles, add cocoa powder; for cinnamon spice waffles, add cinnamon.

  • Don’t throw out those left over waffles- Save them for a savory sandwich OR use them to make lectin-free breadcrumbs! (My crafty brother taught me the breadcrumb idea.)
