Sugar Free Caramel Sauce

 

SUGAR FREE CARAMEL SAUCE??? Yes, it's true- you can have sugar free caramel sauce in less that 20 minutes. This caramel sauce can be used as a frostings or drizzled over your favorite dessert. Try it on pancakes, waffles, or my favorite french toast sticks-you'll be amazed.

My husband’s favorite thing on this planet (after me) is caramel. Every year he requests a caramel cake for his birthday. Now, if you are familiar with making caramel then you realize this is pretty much an impossible task because caramel is literally sugar that is caramelized and we don't do sugar these days. There are a lot of no sugar sweeteners out there but they do not behave like sugar. In preparation for his birthday-I spent a many frustrating days experimenting with different sugar-free sweeteners. Everyone was a huge fail. Sure thing his birthday got close and guess what kind of cake he wanted. Yep, salted caramel cake. Ugh. When I heard those dreaded words, I almost fell to my knees in tears.

To this day, lectin-free cooking has been challenging but this whole caramel business almost made me give up completely. It took me 2 birthdays of caramel failures before I finally figured how to make that caramel cake a reality. Now I get to share the caramel sauce with you so you don’t have to struggle.

Recipe for Sugar Free Caramel Sauce on Lectin Free Wife by Brie Minnaar

Sugar-free Caramel Sauce

The ingredients listed yields about 3/4 cup.

INGREDIENTS

Here’s all the goodies you need to make Sugar-free Caramel Sauce.

  • 4 tbls unsalted butter*

  • 1/4 c allulose liquid (I’ve only tried the liquid, not sure if the powder will work)

  • 2/3 c canned coconut cream**

  • 1/4 tsp iodized sea salt

*Butter notes- use compliant butter

**Canned coconut cream notes- Must use canned coconut "milk". Coconut milk from a carton will not be thick enough. To retrieve coconut cream from can- gently open can, disposing of top and use a spoon scoop out the coconut cream into a measuring cup. You can make this step even easier by refrigerating the can before you separate.

INSTRUCTIONS

Here’s how to make Sugar-free Caramel Sauce at home.

  1. In a small sauce pan over medium to low heat, add the butter and allow butter to cook until it starts to brown (Around 5 minutes) Use a wooden spoon to stir continuously

  2. With the wooden spoon- stir in the liquid allulose, coconut cream, and salt until combined. Use a whisk if coconut milk solids are not combining easily.

  3. Turn the heat as low as it will go and allow to simmer (move to smallest burner if necessary) for 15 minutes without stirring

  4. Without stirring, check consistency if not thick enough-continue to cook for 5 more minutes without stirring

NOTES:

After final cooking time, if caramel starts to separate or curdle or where the butter looks like it is floating on top, the heat may have been too hot. Remove from heat and whisk in a tablespoon of coconut cream. Continue adding a tablespoon at a time, then whisking until it has a smooth syrup consistency.
