Homemade Sprinkles
This list of ingredients is enough to make one cup of Homemade Sprinkles
INGREDIENTS
Here’s all the goodies you need to make Homemade Sprinkles.
1 c (132 g) confectioners Swerve- sifted
1 tbsp (14 g) egg whites
1 tsp vanilla extract
2 tbsp freshly squeezed lemon juice
1-2 tsp of water
beetroot powder-sifted (optional)
blue spirulina powder-sifted (optional)
green spirulina powder-sifted (optional)
turmeric powder-sifted (optional)
purple sweet potato powder-sifted (optional)
INSTRUCTIONS
Here’s how to make Homemade Sprinkles at home.
Line baking sheets with parchment paper
Whisk the egg white and vanilla extract until slightly frothy in a medium bowl.
Whisk in the confectioner's Swerve, lemon juice, and 1 tsp of water until a smooth gel is formed
Divide the gel into smaller bowls before adding the color
Add a small amount of sifted colored powder into each bowl. Use a small silicone spatula to work in color. Add color in small increments until the desired color. If gel becomes too thick, add a drop of water.
Use the silicone spatula to scoop the colored gel into a piping or zipper bag.
Use your hands to squeeze the gel into a corner of the bag, then twist the top.
Repeat steps 5-7 for each of the colors
Cut a tiny hole in the corner of the bag and pipe as many lines as you can get from each bag onto parchment paper-lined baking sheets.
Allow to lay out to dry for 10-24 hours.
Once dry, scoop the sticks together and cut into the preferred sprinkle size with a knife.
Tips for Success…
Sift all powders. If you don’t sift then you will get clumps and it will block the tip when you are piping
Start small. When you make the first hole in the piping bag, make it as small as possible. Test the thickness, then if it’s not big enough cut a slightly bigger hole. You can always make the hole bigger but you can’t make it smaller. This is a baker’s version of the old saying “measure twice and cut once”.
Use what you have. If you don’t have piping bags, use zipper bags
Swerve. Out of all the powdered sweeteners, use Swerve confectioners. The other types of sweeteners don’t harden like Swerve
