Pink Beet Latte

 

Looking for something pink for your Valentine? Try this Pink Beet Latte. Does drinking a beet seem a little odd? It did to me too until I tried it and then whoaaaa, I was in love. Not only is this drink adorable but this Pink Beet Latte has no dairy, no caffeine, it’s gluten & lectin free. This is such a smooth and creamy drink, I think you will love it too when you give it a try.

Let’s talk Milks…

  • COCONUT MILK-For the base of this recipe for Pink Beet Latte, I used a canned coconut milk because it is thicker and creamier than regular coconut milk you can buy in a carton or powdered coconut milk. You could try other milks but I don’t think the end result will be the same without the creamy texture in the canned coconut milk. Read the label when buying canned coconut milk often there are dangerous hidden additives lurking in the ingredients. Two brands of canned coconut milk that I like are Native Forest Organic Classic Coconut Milk & Trader Joe’s Organic Coconut Milk.

  • ALMOND MILK-I used almond milk for the frothed milk however this could easily be swapped out for A2 milk, coconut milk, macadamia milk or any other compliant nut milk.

Why beetroot powder?

I prefer to use beet powder because its quick, the clean up is easier, and I have some on hand. The beetroot powder I use is organic and is relatively inexpensive. If you don't have beetroot powder, you can use a fresh beetroot. Keep in mind that fresh beetroot and beetroot powder can stain clothing, hands, and kitchen utensils.

For best results with beetroot powder- always sift before using to be sure to there are no lumpy bits.

To use a fresh beet, start with peeling and cubing the beet. Add the cubed beet into boiling water for 20 minutes OR until beet is soft and can easily be pierced with a fork. Drain the water and then use an immersion blender to puree the beets. Substitute the 1 tsp of beetroot powder with 2 tbsp of beet puree.

INGREDIENTS

Here’s all the goodies you will need to make a Pink Beet Latte.

  • 1/2 c coconut cream-can

  • 1 tsp beet powder-sifted

  • 1 tsp allulose liquid

  • 1/2 tsp maple extract

  • 1/2 tsp vanilla extract

  • 2 tbsp water

  • 1/4 c almond milk

Ingredients you will need to make a Pink Beet Latte.

INSTRUCTIONS

Here’s how to make a Pink Beet Latte at home.

  1. In a butter warmer or a small sauce pan over low heat, add coconut cream, beet powder, allulose liquid, maple extract, vanilla extract, and water combine with whisk or a fork until texture is smooth, heat until warm

  2. Put the almond milk into a glass measuring cup and heat in microwave for 40-60 seconds

  3. Using either an electric whisk or hand whisk- whisk warmed almond milk until desired froth is created

  4. Pour warmed pink beet mixture into a insulated cup and then top off with froth almond milk
