With fall rapidly approaching, I had been dreaming of “all of the things” I could “pumpkin spice.” I thought back to the days when I filled my body with junk foods and remembered the sugary dessert pizza they used to make at Cici’s Pizza. I wondered if I could create something similar in a pumpkin spice flavor but with ingredients that are good for you. The pumpkin spice pizza idea swirled around in my head.

We invited our new next door neighbors over for dinner. The only food restriction was no shellfish. Which is super fun because I can use lectin-free ingredients of my choice. I decided on pizzas because who doesn’t love pizza? AND now, it was my chance to give pumpkin spice pizza a go. I made 4 different types of pizza. That way if my dessert pizza turned into a flop we would have back ups.

Ya’ll, this Pumpkin Spice Pizza surpassed what I envisioned. It was everyone’s favorite pizza of the night. It reminded me of a shallow cobbler. The sliced tiger nut tasted similar to an oatmeal topping.

What’s a tigernut? Contrary to its name, a tiger nut actually isn’t a nut at all. Tiger nut is marble sized tuber. It gets its name from the stripes on the exterior of the tuber.

Why should you eat tiger nuts? Turns out tiger nuts are a superfood, high in resistant starch fiber. Which means tiger nuts work as a prebiotic and reduces blood sugar spikes.

What do tiger nuts taste like? Sliced tiger nut reminds me of the flavor of oatmeal. I think both the sliced tiger nut and flour has a pleasant unique texture.

How do I eat tiger nuts? Tiger nuts come in many different forms. You can get them whole, sliced, or ground into tiger nut flour. (Making it a perfect flour substitute for friends with nut allergies)

Where can I find tiger nuts? So far, I have not found tiger nuts in stores yet, so I buy my sliced tiger nuts online.

Sauce

  • 1/2 c sweet potato puree

  • 1 tsp maple extract

  • 1 tsp vanilla extract

  • 1 tbsp brown sugar Swerve

  • 1 tsp pumpkin spice seasoning (My secret blend)

  • 1 tbsp ghee

  • 1/8 tsp iodized sea salt

Cream Cheese Icing

  • 1 tbsp organic cream cheese

  • 1 tbsp butter or ghee

  • 1 tsp vanilla extract

  • 1 tbsp Allulose liquid

  • 1 tbsp balsamic reduction

For the Toppings

  • 1/2 c walnut

  • 1/2 c sliced tiger nut

  • 1 1/2 tsp ginger powder

  • 1/2 tsp pumpkin spice seasoning

For the Crust

INSTRUCTIONS

Here’s how to make Pumpkin Spice Pizza at home.

Pumpkin-Free Sauce

  1. In a large glass measuring cup whisk together, sweet potato puree, maple extract, vanilla extract, brown sugar Swerve, pumpkin spice seasoning, ghee, & sea salt

For the toppings

  1. In a small bowl combine chopped walnuts, sliced tiger nuts, ginger powder & pumpkin pie spice

  2. In a glass measuring cup place the cream cheese, butter, vanilla extract, and Allulose. Microwave for 20 seconds and whisk together.

Assemble the Pizza

  1. Cook sour cream pizza crust according to instruction

  2. Coat cooked pizza crust with sweet potato sauce

  3. Sprinkle walnut topping evenly over sauce and bake for 10 minutes.

  4. Remove from oven and drizzle cream cheese icing and balsamic reduction vinegar.

  5. Slice and serve.
